A guide to simple nutrition changes that actually stick

If there’s one thing I’ve learned after working with truck drivers for years, it’s this: Most drivers do not need another complicated health plan.

As drivers, spending days or even weeks on the road at a time, you don’t need a 30-day challenge. You don’t need to meal prep like a bodybuilder. And you definitely don’t need someone making you feel bad for where you’re starting.

What drivers need are realistic tools that actually fit the life they live.

That’s why at Mother Trucker Yoga, I teach what I call Lifestyle Fitness & Wellness —simple changes that work in the real world, on the road, in truck stops, at fuel islands and inside the cab of a truck.

And one of the easiest places to start?

👉 Eating just one more fruit or vegetable than you’re eating right now.

That’s it.

I call this the “Rule of 1 More.”

This is one of my favorite wellness principles because it takes the pressure off.

Don’t eat vegetables regularly? Start with one.

Never buy fruit? Grab one piece.

Already eating some healthy foods? Add one more serving.

The problem is most people think health has to be extreme to matter.

But consistency always wins. Small simple changes done over time create massive results.

And spring and summer are the perfect seasons to start practicing the Rule of 1 More, because fresh produce is everywhere. It’s easier to find — and honestly, it just tastes better this time of year.

Why do truck drivers struggle with healthy eating?

Let’s be honest. The trucking lifestyle isn’t always set up for easy healthy choices. You’re constantly dealing with long hours. Unpredictable schedules. Limited parking. Fast food everywhere. Fatigue. Stress. Convenience culture.

When you’re exhausted, grabbing chips or a drive-thru meal feels easier than thinking about nutrition. I get it. But here’s what I want drivers to understand:

Healthy eating does not have to be perfect to help your body.

Even adding small amounts of fresh foods can support:

  • Better energy;
  • Digestion;
  • Hydration;
  • Recovery;
  • Joint health;
  • Inflammation reduction; and
  • Mental clarity

Your body notices the little things. And when you consistently give it something better, it responds.

The best spring & summer foods for truck drivers

Here are some of my favorite simple produce options for drivers during warmer months. These are practical, portable and easy to keep in a cooler or truck fridge.

Strawberries: Easy energy & immune support

Strawberries are one of the easiest healthy snacks to keep on hand. They’re naturally sweet, packed with vitamin C and loaded with antioxidants that help support recovery and immunity. They’re also high in fiber, which can help digestion—a big issue for many drivers.

The best part? There’s no prep required: Just wash them and toss them in your cooler. Done!

Cucumbers: Hydration on the road

Many drivers are walking (make that driving) around dehydrated — and they don’t even realize it. Fatigue, headaches, stiffness and cravings can all be connected to low hydration.

Cucumbers are mostly water, making them one of the easiest foods to support hydration naturally. They’re refreshing, crunchy and easy to snack on while driving or during breaks. Add them to wraps, salads or eat them plain with hummus.

Blueberries: Brain food for drivers

Truck driving requires focus — and blueberries are one of the best foods for supporting brain health and reducing inflammation.

They’re easy to pack, easy to snack on and a healthier way to satisfy sweet cravings without the crash you get from candy or sugary snacks. Plus, they pair perfectly with yogurt, oatmeal or protein shakes.

Bonus driver favorites

Here are a few more simple options drivers love.

Watermelon: Great for hydration during hot months.

Baby carrots: Crunchy, portable and easy to swap in place of chips.

Spinach: Easy to throw into wraps, eggs, sandwiches or salads.

None of these foods require perfection. That’s the point.

Stop trying to change everything at once

One of the biggest mistakes people make when trying to get healthy is attempting to change their entire life overnight.

This strategy usually lasts about a week. Then guilt kicks in. Then people quit.

That’s why I always tell drivers: You don’t need to become a different person. You just need to start making slightly better choices more consistently.

That’s real wellness.

Because if it only works when life is perfect, it’s probably not realistic for trucking.

Wellness is about momentum.

One healthy choice often leads to another:
